Korean Beef Rice Bowls

This recipe is from the May 2017 issue of Parents Magazine. It was really easy and different, and we definitely enjoyed it!

Ingredients

  • ¼ cup soy sauce
  • 5 tsp brown sugar packed
  • 1 ½ tsp rice vinegar
  • ¼ tsp pepper
  • 2 tsp sesame oil
  • 3 cloves garlic minced
  • 1 ½ tsp fresh ginger minced
  • 1 lb ground beef
  • 4 green onions thinly sliced
  • 2 cups rice cooked
  • 1 tsp sesame seeds toasted

Instructions

  • In a small bowl, combine soy sauce, brown sugar, vinegar and pepper.
  • In a large skillet, heat oil over medium-high heat. Add garlic and ginger. Cook and stir for 30 seconds.
  • Add beef and cook until no pink remains, stirring to break up the meat as it cooks.
  • Stir in the soy sauce mixture and white part of the green onions.  Heat through.
  • Serve beef over rice. Top with carrots, remaining green onions, and sesame seeds.  Enjoy!
